This dish and I go way way back to year one of being vegan. I was going home for Thanksgiving and wanted to bring a sweet potato dish that wasn’t sweet or necessarily traditional. When reading the original recipe, I was not thinking it sounded too good, to be honest..until I started reading the comments posted of people stating that exact thoughts but following it with how surprised and shocked they were of the amazing flavors. I remember being so busy that week with work that when I got to the stores they were so picked through that I couldn’t find the ingredients to the original recipe that I was hoping to re-create. I was bummed but I made some adjustments and came up with this dill sauce, which has been a favorite of mine and many others that I have introduced this easy to make dish to for years and years now! A reminder that recipes can really just be inspiration for new amazing concoctions!
